The list is too long, so I will just put my recommended beat list:
Red Dead Redemption (its not over till credits roll)
Call Of Duty Black Ops (really any COD)
Prince of Persia (the sands of time trilogy)
Left 4 Dead (1 or 2)
Orange Box (all thats with in this case)
So far thats my list, hoping new great stories come out soon!

the only 2 games i have all achievements for are madden '08 and open season, and only because both those games have no online achievements. Other games i would beat but no one plays them online anymore or the people who do playonline have way too much time on there hands and are alot better than me.

I finish all the ones I play. I also (like AutoMax) have to find all the secrets, unlockable items, secret levels, etc. - or I do not consider it finished.
My list is also really long, but my very favorites were:
The entire DOOM series (and expansion pack).
The entire Quake series (and expansion packs).
The entire Unreal Tournament series.
Halo 1.
Command & Conquer (1, Tiberian Sun, and Red Alert).

Halo all levels , Halo 2 easy 2 player co-op.
Timesplitters 2 amd 3 some fastish times on a few levels on TS3 ( live nick thebobs ). All levels 2 player co-op
Serious Sam not opend sam 2 yet. Original Sam could not complete level 16 ( I think ) on hard. 2 plaer co-op
Ghost recon 2 and Summit strike normal levels only completed. Both played as 2 player co-op
Swat all levels also completed on hard using tranc guns only co-op
Gauntlet dark legacy easy and normal levels only 3 plaer co-op
Conflict desert storm 1 and 2 all levels completed 2 player co-op
Currently playing Warriors 2 player co-op part way completed .easy
Currently also playing X-men 2 part way completed . 3 player co-op easy
Currently also playing conflict global terror completed easy . normal . hard and on level 13 of extreme 2 player co-op
We only play co-op games but there are some good ones out there now
